Mad Dog, Way to make double use of the pig roaster, great idea. That spread looks great. At the Dustycajun household we do fish smoking for the holidays for Christmas gifts. This years batch included Albacore, Yellowfin Tuna and Bluefin Tuna bellies. Slow smoked in the Big Chief with a maple syrup, Soy Sauce, Ginger glaze. To be served with crackers, cream cheese and... Jalapeno Jelly. DC |
