I found out some more info on the South Seas in Salt Lake City.

First off, it was run by Benny Chan, who also had the Polynesian.

Here is an article on the opening, as always it was a family affair with the Chans.

Second up, there were two South Seas in Salt Lake City run by the Chan's with the second location called the South Seas Café as seen in this add for both locations.
