I'm certain it'll be delicious. One note I'd make is that you don't need to add the simple sugar to the infusion as the rum and pineapple are both sweet as-is. A second note I"d make is that using the outer...rind?...of the pineapple is how Plantation does it - they do white rum with the rind and the fruit with the dark rum.
