My wonderful partner brought me a young coconut - tonight was the night to break it out for two drinks I've avoided previously: First up a Luau Coconut: Following some careful hacking, a Moonkist Coconut: Why would you ever drink a Pina Colada again? These are both brilliant! The main plus for both of them was that both were far less creamy than a Pina Colada - I used light coconut milk (as I would when cooking with it). It's not hard to think of subbing gold or dark Jamaican rum but they are fine as they are. Cheers to mikehooker & Hurricane Hayward for posting about the Moonkist Coconut recently. In the spirit of trying drinks that look odd on paper, here's number 3 - the Albuquerque Old Fashioned: The mix of spice & whiskey is good! |
