I got many hits when I searched "Demerara" here. And a bunch more when I searched only in the "Tiki Drinks and Food" thread. Is it possible you're not searching correctly? Or, are you actually reading the hits you're getting? I found many discussions of not only the various Demerara rums, but also the cocktails many of us are using them in. Some of the posts are very recent, especially those about Lemon Hart 151, Hamilton 151, and substituting those in various drinks. Searching for "El Dorado" will give you a bunch of hits as well.

Finally, two more things, followed by two suggested recipes:

  1. Some recipe books, in their index, list recipes you can make with specific ingredients.
  2. Phone apps often do the same -- TotalTiki for the iOS platform. With TotalTiki, Demerara rum is specified in 20 recipes and can be used in 24 recipes.

Here are a couple personal Demerara recommendations:

  1. Try a "Boo Loo" if you're into fancy presentation. Hollow out a pineapple (buy a tool for this) and then make the drink and serve it. Your guests will be very impressed, and the drink is not bad.
  2. Try "Beachbum's Own." It's the predecessor to the one further refined and served at Latitude 29 in New Orleans.

AceExplorer, thank you for your response and suggestions. I did not read completely through the posts generated by my search. The subject lines and initial posts were not relevant to my question-although, and I am thankful for your influence, when I began to read deeper, I did find some nuggets. Using the search term "Demerara" in the "Drinks and food" forum (and Google-save for some non-tiki cocktails) did not produce off the beaten path info on cocktails. HOWEVER, (and again, thank you for your influence) I have not tried the names of specific rums-duh:( That will be my next step.

I am new to tiki cocktails and rum, so I have not tried apps-are you teaching me how to plant corn and not just giving me one time periods supply? Thank you for the recipes. I will check them out. Ok, enough for now, and for now, you have pointed me in some great directions! This was very helpful.
