I would say get lights like this that you can dim.
You can buy and add inline dimmers for each light and dim them as needed.

Thanks! Both are good suggestions. I've been looking at LED battery based art lighting, I'm just having trouble spending the $90 a piece on them. Might work out something custom (and cheaper).
