That Colorado location has become SIMM's Steakhouse. Here are some pics from the place now. The exact same footprint as POE and The Castaway. Trust me I know. 😎 Here is an outside view of the Troy, NY Castaway I ran in late 80's, well before it became a Dinosaur BBQ.
