Disney's Polynesian Pineapple Macadamia Bread recipe?

Pages: 1 7 replies

Does anyone remember the good old days in the early 90s when the King Kamehameha concierge lounge was off the main lobby in the Great Ceremonial House? Every morning in the lounge they had the most amazing pineapple macadamia nut bread that I couldn't get enough of and still dream about. Sooooooo yummy.

I've been dying to find the recipe. I can't have gluten anymore, but I bet I could tweak it with gluten-free flours and get it pretty darn close.

This is not the pineapple bread with macadamia nut butter that they now serve in the Kona Cafe. That's completely different--it's a dinner-roll kind of bread, whereas the old one was a dense, sweet kind of zucchini or banana bread style.

That stuff was like tropical breakfast heaven. Any leads much appreciated! Thanks!

It might be under a different name but see what Tikiman has on his site. He's certainly got a lotta old recipes. http://www.tikimanpages.com/poly/polynesian-recipes

Is this close? I don't know the bread in question

Thanks everyone! I did try the Tikiman pages & that one on AllEars is kind of close, but it's not a yeast-rising bread, more like a sweet quickbread. There are some similarities, but it was also packed with macadamia nuts. This is the closest I've been able to find yet:

Maybe I'll shoot a Facebook message to Tikiman. Seems like he's gotta know.

Thanks!
Tara

That Prepared Pantry one looks good. I was trying to make a Tropical Fruitcake a few months ago, started with a banana bread mix and added lots of macadamias, cashews, coconut, dried tropical fruits. Turned out pretty good.

what's the secret? whenever i made fruitcake it turned out all crumbly and falling apart.

Tara, I'm making the Prepared Pantry recipe now. I don't think it's going to make it to the oven, because this batter is so good, I'm gonna eat it with a spoon! Can't wait to see how this comes out for breakfast

It could be a few things, such as your dried fruit (if there was a ton of it) may need to be soaked prior to going in the batter, the quantity of stuff may have also been too high, or you need to soak your cake more after baking.
