So there's definitely the factor that maybe Keith doesn't drink enough anymore to compare – if I had a Zombie or Mai Tai beforehand, then went to Pearl Diver, I might have noticed the vast contrast in profiles.

Also it's important to remember this is a coconut-base and not butter, so that's different too. One thing's for sure, I'm very excited to use more of it and play around!

We used to make our own Gardenia Mix but are now using the BG Reynolds. I've found the BG to lack the Vanilla flavor you get from home made...so I've been making Pearl Diver's with 3/4 oz BG Gardenia Mix(instead of 1/2 oz) and I add 1/4 oz Vanilla Syrup....very tasty! Brings back the creamy vibe!

Just finished some baking, and since it's late and I made enough of a mess already, I wanted something quick and easy without juicing any citrus. Found something with a few tiki staple ingredients.

Brown Derby Cocktail

I absolutely love the Brown Derby, such a good "easy" cocktail. Had a take on it at a local that was with lemon juice and a couple of dashes of orange bitters and used Old Grand-Dad - really, really good.

Years ago I found a recipe called the Gold Rush that sounds a bit like that (sans the bitters), subbing the lemon for the grapefruit and with slightly different ratios. It's good, too.

That time of year again.

Red-Nosed Zebra 
Makes 1 cocktail
1.5 ounces Bacardi 8 rum

1/2 ounce fresh lemon juice

1/2 ounce fresh lime juice

1 ounce agave nectar

1 ounce strawberry purée

Crushed ice, 3 cranberries, 2 mint sprigs, for garnish
Add all ingredients to a Boston Shaker (except garnish), fill half full with ice, and shake vigorously for 10 seconds.
Strain into a glass filled with ice. Garnish with a mound of crushed ice, cranberries, and mint sprigs to look like 2 green antlers, cranberries for eyes Thanks to the tc’er that posted this some years back

Working my way through the Miracle menu. My favorites so far are ...


The Christmas Carol Barrel (aged rum, Aquavit, amaro, pumpkin pie, lemon, Angostura bitters) is a mashup of Tiki, Christmas and craft cocktails.


Yippie Ki Yay Mother F****r! (sweet potato, Barbados rum, cachaça, Trinidad overproof rum, dry curacao, marshmallow orgeat, lime) packs a powerful wallop of flavor. Rum fans will enjoy this.


The biggest surprise: And A Partridge In A Pear Tree (reposado tequila, pear brandy, mezcal, spiced brown sugar, lime, egg white, club soda, Angostura bitters, cinnamon) is smoky, sweet and perfectly balanced.

Finally made it down to Death or Glory in Delray Beach for their Miracle mothership. Fantastic drinks, food and decor.


A Gingerbread Old Fashioned (bourbon, gingerbread syrup, Elemakule Tiki Bitters, nutmeg) flanked by two Snowball Old Fashioneds (butterscotch rye, spiced brown sugar, wormwood bitters, orange zest).


Christmopolitan (vodka, elderflower, dry vermouth, spiced cranberry sauce, rosemary, lime, absinthe mist)


A frozen Jingle Balls Nog (cognac, Pedro Ximenez sherry, brown butter, cinnamon, cherry, vanilla, almond milk, cream, sugar, egg, nutmeg) and Yippie Ki Yay Mother F****r! (sweet potato, Barbados rum, cachaça, Plantation O.F.T.D. rum, dry curacao, marshmallow orgeat, lime).

I can't say enough about all of the Miracle drinks.

Christmas is here, which means I am finished opening all the rums on the Rum Advent Calendar that Mrs. Mai Tai made for me. There were “bonus rums” in my stocking as well! So, what does one do with 30 or so rums in tiny little bottles?

I decided to break the rums into several groupings:

  1. Rums that I already have (Goslings, Captain Morgan, Sailor Jerry): these go into the bottles I already have.
  2. Rums that I want to try out, including Bacardi Gold (which I’ve never tried at home in a cocktail), some spiced rums, and coconut water rums. These I’m keeping and will work with soon.
  3. Dark rums, gold rums, and spiced rums: these go into my Dark Rum Infinity Bottle.
  4. Silver rums: a new Silver Rum Infinity Bottle
  5. Flavored rums: These won’t work in the Infinity Bottles, so am saving these out as a separate category to experiment with. Looking for some good Coconut Rum recipes.

I made my “Advent Rum Mai Tai” with about 15 or so of these rums. Heavier on the dark rums, but some silver here and there as well. And then I made my standard home Mai Tai featuring Ferrand Dry Curacao, Latitude 29 Orgeat, and BG Reynold’s Demerara Syrup. All placed into a Sippin Santa Mug and topped with the spent lime shell and fresh mint.

This Mai Tai actually tasted great. A Christmas Miracle! Mele Kalikimaka everyone.
