Coconut Tapioca Pudding

Coconut Tapioca Pudding (serves 4)

1/2 cup granular or quick cooking tapicoa
2 1/2 cups milk
1/2 vanilla bean, split, seeds scraped, or 1/2 tsp vanilla extract
pinch of salt
2 lg eggs
2 tbsp sugar
1/2 cup cream of coconut
2 cups sliced grapes (or not)
zest of lime (or not)

*combine tapioca, milk, vanilla bean & seeds (or extract) & salt in medium sauce pan & place over med heat
until steaming. (3 min).remove & discard vanilla bean if used.

*combine eggs, sugar, & cream of coconut in a med bowl & whisk to combine. whisking constantly, slowly add 1/2 of milk mixture. return to pot & stir to combine. cook over med heat, stirring frequently until thick & pudding like, about 7 min.

*spoon pudding into 4 serving dishes & set aside until ready to serve.
*top with grapes & lime zest if you like.

I think I'll have to try this recipe - minus the grapes! :wink:
