July/August 08 Issue of Imbibe Magazine. The article is about classic and contemporary liqueurs. From page 44: "Domaine de Canton appears in drinks such as the Xtabay at Forbidden Island in Alameda, Calif, where owner Martin Cate is pairing it with sumac-infused pisco..." I've had that cocktail and must say I would put it in my personal top 8-10 drinks I've ever had at FI. Certainly in the top 5 of all the seasonal specials they've had. I have a bottle of the Domaine de Canton and love playing with it at home. I find it works extremely well with blood orange juice. |

Sumac infused pisco? Is that Yma Sumac infused with Pisco, or Pisco infused with Yma Sumac? Exactly how does one infuse pisco with Yma Sumac? |
