Tip of the Radio Fez to the Cocktail Chicks in New Orleans for this http://www.inthelandofcocktails.com/ , via Beachbum Berry's latest post on "Nouvelle Orelans" http://blog.beachbumberry.com/2009/05/11/nouvelle-orleans/

From the long-gone N.O. Polynesian palace "Bali Ha'i at the Beach":

The Bali Hai Fog Cutter
Makes 4 (or more) drinks
8 ounces fresh orange juice
6 ounces fresh lime juice
6 ounces simple syrup
4 ounces light rum
4 ounces dark rum
4 ounces brandy
4 ounces gin
1/4 ounce almond extract

Combine all ingredients in a pitcher with ice and mix. Serve in tiki glasses or tall glasses.

Orgeat as a sub for almond extract and simple syrup?

I am curious about this recipe and the FOGG CUTTER recipe featured in BB's Remixed. They both contains almond extract and simple syrup...I don't have any almond extract, but maybe I can use orgeat instead of simple syrup + almond extract?

Fogg Cutter (Bali Hai, New Orleans, LA)
2 oz Orange Juice
1½ Lime
1½ Simple Syrup
1 Light Rum
1 Dark Rum
1 Brandy
1 Gin
½ tsp Almond Extract

Put it all in a blender with 1 cup of crushed ice and blend on high for five seconds. Pour unstrained into a tall glass.

Yes, I'd just use orgeat in place of the simple syrup. Later, if you get some almond extract, you can make one for comparison. I'll bet they are very similar.
