Have you made a honey syrup yet to go with your sugar syrup? It'll make life a lot easier. Boil them together at a 50/50 ratio and store it in the fridge. When a recipe calls for honey, you use that and double the amount. The little water you are adding won't make a difference, but it'll mix better and just be plain easier on you.

Pretty good going. You have not poured anythign down the drain yet because you just couldn't finish it...
