MadDogMike, "salted and soaked the eggplant in water about 15-30 minutes prior to cooking as it draws out something from the eggplant which can cause the itchy mouth (the water will be brown after soaking)" Also breading & frying the eggplant seems to alleviate the effect for many people, but some people are just allergic to Eggplant. |
