I love Bread Pudding, that looks good...I will be back later with a Hawaiian version of Bread Pudding.

In the meantime, here is a simple salad to make. The only other item that would kick it up a notch would be bacon bits, but as is, it is low in calories and I suggest using red grapefruit from the jar (just drain liquid).

GRAPEFRUIT & AVOCADO SPINACH SALAD
Yield: 4 servings
Prep time: 5 minutes
Cook time: 5 minutes

This light and refreshing salad works great with any and all of your favorite citrus fruit. Try a combination of grapefruit, orange and lime to really kick this salad up a notch!
Ingredients

16 oz. baby spinach, washed and ready–to–eat
2 grapefruits, segmented
2 avocados, medium dice
¼ red onion, julienne

Preparation

Arrange washed spinach in a salad bowl. Place grapefruit segments, avocado and onion in a work bowl and toss well. Spoon citrus, avocado and onion mixture over spinach and serve.
