Just did some gardening and wanted something refreshing so made my first ever piña colada from a recipe I'd been saving from Raining and Pouring's Instagram page.

Not bad but I prefer Painkillers. Atleast I got to try out my new Siestaware mug!

Tiki Night 2: A Tribute to the Mai-Kai was a strong success. Here's what was on the menu:

Round One: Jet Pilot

I'm a bit surprised that so many people think this version of the Jet Pilot is one to make you never wanna go back to the Steve Crane version. Admittedly the Crane version is sort of a Zombie but w/differently configured ratios, but I like the darkness of it. This one doesn't have the cinnamon, but the fassionola almost plays a similar role. I might look into remaking this but just cutting down on the booze a bit. Definitely one to let sit and dilute to really enjoy.

Round Two: Deep Sea Diver

Blended nicely (let's pretend I didn't ignore the first exploding batch of butter in the microwave) and light. Curious to try a regular homemade Pearl Diver as I've only had those outside the house. Love having been able to use my new Pearl Diver glasses.

Round Three: Black Magic

This has grown on me a bit since testing it on Sunday. The wife definitely doesn't like the coffee, though really it's not that bad especially as the drink sits a bit. Gotta be in the mood for something a bit dark though. Looking forward to trying more coffee-based cocktails now.

Round Four: Cobra's Kiss

A bit fruity for me, maybe leaving out the grenadine next time would be a fine amount. Needed something light after the dark and heavy Black Magic.

Hmm, I find the Atomic Grog's Jet Pilot to be so much more balanced than Crane's and one of my favorite drinks to make (though I haven't had one in a while). I guess everyone's taste buds are different.

I'm not a coffee drinker and neither is my wife but last time we were at Mai Kai she ordered the Mutiny. I had some sips and thought it was quite good. I've made it at home a couple times since and think the tribute is damn close. Can't speak for the Black Magic as I've not tried it there or at home but I would recommend giving the Mutiny a whirl.

Did you make the Cobra's Fang or Cobra's Kiss? I've never had a Cobra or Cobra's Fang that I really enjoyed but man, that Mai Kai Cobra's Kiss is really something else. I don't find it too fruity at all, rather spicy and somewhat potent. Made it for two different friends recently and they're now obsessed with it.

The 151 Swizzle probably still reigns surpreme for me as far as the Mai Kai drinks go.

Oops, Cobra's Kiss.* I'll amend above. What do you find spicy? I don't think I missed anything though as the last drink of the night I suppose it was possible.

1 ounce orange juice
3/4 ounce falernum
1/2 ounce fassionola
1 ounce gold Jamaican rum
1 ounce dark Jamaican rum
1/4 ounce grenadine
2 dashes Angostura bitters
1/4 teaspoon Pernod

However you feel about it, HH's Jet Pilot receipe is spot on with what they serve at the Mai Kai.

I can recommend the SOS & the Hukilau (my fave of the coffee drinks) for your next tribute night :)

What falernum did you use? I make it with my homemade version of Falernum #8. That combined with bitters and a 1/4 teaspoon of Pernod (way more than I put in any other drink) gives it more of a spicy kick than a sweetness to me.

I agree with Ad about trying the SOS. That's definitely more on the sweet side and one I need to revisit soon. While it's Mario's take on the Three Dots and Dash, it's not like any I've ever tried. A great drink in it's own right though, and it goes quick. Make it a double!

I bought Fee Brother's specifically for my tiki night given I wanted to be as accurate as possible to the Mai-Kai tributes. I won't be buying it again it after it's gone (if I don't throw it out before). I think it's the fassionola that makes the drink so sweet, or from what I recall. I might make it again tonight. I'll look into the other drinks shortly, though it'll be a solo quest as our tiki nights are annual and with lots of people. :)

I'm a Fee Brothers convert after initially being suprised by it in my first tries - it's just got a great thick flavour unlike Taylor's I was using before. I wouldn't throw it out, just keep trying it out & see if you like it - some drinks, no way, other drinks, it's got to be.

But with the Mai Kai recipes using rich sweetners I think you've got to tweak them to balance them to your personal taste - but my experience of the drinks when I went to the Mai Kai was that HH is making amazingly accurate tribute recipes.

Here's a few of my tips:

  • Work out your preferred honey mix ratio - I make mine 3:2 instead of 2:1 or 1:1 for all my drinks now.
  • Cut back falernum & fassionola slightly - 3/4 oz could become 1/2 oz, 1/4 oz could become 1/8 oz to suit your tastes.
  • Add a couple of dashes of bitters (i do in the SOS)
  • Try adding a few extra drops of Pernod if the recipe calls for it.

I tried the Zulu tribute recipe from Atomic Grog last night, it's a prime example of Mai Kai flavours & one I'll tweak on a second try.

Busting through the recommended Mai Kai tributes: Yeoman's Grog. It's okay, a bit grapefruit-forward, but not a bad Navy Grog variation.

For my palate, they're all quite nice. I like them better as they get older (as is almost always the case for me). The 23 has a very nice complexity and depth of flavor with some spice and toffee notes and a very smooth finish. The younger ones have a bit too much heat on the finish for my tastes.

Hang10tiki: you've been flying the Ballast Point flag for some time now, so the other day when I was offered a beer I chose a BP Sculpin to try for the first time. I am not a big IPA fan as I don't like overly hopped beer but I have to say - that must have been the best IPA I have ever had. Really well balanced flavor and not super bitter. Loved it!

I have finally found a bottle of Diplomatico rum. (About $45) I was surprised to discover that it is REALLY sweet - like a liqueur. It has a nice flavor, but is just too sweet for me so I'll stick to the Pampero Aniversario as my dark rum.
