A recipe for Anejo rum from the Mai Kai

Floridita Daiquiri

3 oz Anejo rum
3 oz fresh squeezed grapefruit juice
1 oz fresh squeezed lime juice
1 oz sugar syrup (or 1 teaspoon of sugar)

Combine all ingredients into a blender, add 2 cups ice, and process until smooth. Serves 2. For non-alcoholic, substitute club soda for rum.

Now I have a reason to try the St. James Anejo that's tempted me at the store.

Oddly, the Floridita Daquiri tastes closer to the Mai Kai's version if you use Appleton White Rum. Still good with St. James, but tastes a little different and not as snow-white as the one at the Mai Kai.

It is an excellent drink, so enjoy!
