I believe this list was put together by someone who frequents the Grogg Grotto. Having been to both bars and knowing the Enchanted Tiki Bar's menu quite well, I'm quite sure the drinks are slightly to significantly different at the two bars. The evolving discussion on Facebook is quite interesting, and I wondered if the Tiki Central crew would agree or disagree with the posted recipes.

FWIW, my love for Tiki began at the Enchanted Tiki Bar.

POG juice is a mixture of passion fruit, orange, and guava juices. Disney uses a concentrate from Minute Maid, but the producer of POG in Hawai’i is Meadow Gold.

Gorilla Grog (reverse engineered)
1 oz passion fruit juice
1 oz orange juice (no pulp)
1 oz guava juice
1 oz pineapple juice
0.5 oz lemon juice (fresh squeezed)
0.5 oz orgeat syrup
0.5 oz falernum syrup

Zombie Batch (reduced)
16 oz orange juice (no pulp)
16 oz sour mix
10 oz orgeat syrup
Falernum, cinnamon, orgeat, and hibiscus grenadine are from BG Reynolds.
Red passion fruit and agave nectar are from Monin.
Cream of coconut is Coco Reàl in a squeezable bottle.

Quick word of friendly advice to those who are new to tiki and inspired by Sam's. Use these recipes as a starting point and eventually proceed to trying classic tiki drink recipes from others around the globe. If you're nuts about drinks from Sam's East or Sam's West, then you'll also come to enjoy a number of the classic tiki drinks which go beyond what Sam's serves.

Look up recipes on Hurricane Hayward's blog, consult the newer (updated) books by tiki cocktail historian Jeff Berry, and many more resources here on Tiki Central. Booze and mixers and syrups can be expensive, so by consulting the larger compendiums of tiki cocktails, you can gradually work your way up the complexity (and expense) scale. Those who follow this advice may also come to find themselves making a number of their own syrups and other flavorings.

It's great to see Sam's continuing to introduce more folks to tiki - welcome to the jungle! Dang, this is fun stuff...

Thanks for posting. This explains why I've never liked the Mai Tai at Sam's. Bacardi? Not in a good Mai Tai.

Next time, order it with Smith & Cross instead of their default light and dark rum, it's a huge improvement.

Whats with the Angolada recipe, its 1.5 oz bitters and only .5 oz of rum? something is wrong here, any thoughts?

Although i've never tried this drink, have you ever had a Trinidad Sour? (Although there is huge difference in ingredients it might work the same way).

Looks like a Trinidad Sour by way of the Pina Colada to me. Could be good, I've always thought that the PC would benefit from being drier.

Edit: I just remembered, they do also have a variant of the Trini Sour at Sam's off-menu. Lime instead of lemon and Smith & Cross instead of rye. I'm only just realizing what a top notch bar program they have there.

AceExplorer this was my progression exactly-courtesy of Enchanted Tiki Bar Skipper Bernardo who steered my wife and I to Beachbum Berry's Remixed. I was also helped to a GREAT extent by Kevin Upthegrove's 5 minutes of rum podcast and Tiki Central. Hurricane Hayward's blog has accented my repertoire as have various other bartenders. In short, what a marvelous journey-started by Trader Sam's Enchanted Tiki Bar-and Bernardo.

FYI, I tried this tonight:

Pago Pago Cocktail (New!)
3 oz Myers's Original Dark rum
1 tsp White Creme de Cacao
1 tsp Yellow Chartreuse
1 oz lime juice
1 oz pineapple juice

I used Coruba and Green Chartreuse. Upon my first sip, it was way too tart. I added 1/2 oz simple and it was MUCH better.

Head's up, the Angolada and Pago Pago that's actually served at Sam's has different ratios. There's no way that Disney would allow 3 oz of alcohol in a single-patron drink.

EDIT: The Zombie Batch is horribly off, but if you wanna make it and ruin your Sam's zombies w/it then go for it. Also, recipes for the Lapu Lapu and below are not from Trader Sam's, but are old drinks from Tambu Lounge at the Polynesian Village Resort.

I enjoyed their drinks when I visited, didn't realize they used so much POG. I'll have to try to make some when I get the right juices.

The Angolada has the rum and bitters swapped. It's one of my favorites, and I make alot of them at home. Should be:

Angolada
1.5 oz Smith & Cross Navy Strength rum
.5 oz Angostura bitters
2 oz pineapple juice
1.5 oz Coco Reàl cream of coconut
1 oz lime juice
garnish w/orange slice, pineapple leaves, nutmeg

I really am torn w/threads like these given my current status – I nerd out on Sam's, but I will tell you something: I have been told their Angolada is a straight 1 oz all across on everything. Give that a try.

I was also told 1 oz across when I had the Angolada.

I tried the Gin-Ger Snaps. I thought it was delicious. If anybody has a recipe, I would appreciate seeing it.

Josh Papuzza from Ventiki has worked out a decent Gin-ger Snaps if you're ever in Ventura, CA. Since I'm in a compromised position I can't really help out in reverse engineering. :(
