Little Hawaiian Cookbook

Pages: 1 2 replies

My kudos kudos kudos to DrTikiMojo for the wonderful "Little Hawaiian Cookbook" he and Eva gave me from his last trip to Hawaii. I will be making most of the items within....here is the recipe of the first item I made. It was absolutely scrumptious!!!

KING'S HAWAIIAN SWEET - BREAD PUDDING

~ 1 Kings Hawaiian Sweet Bread (15 ozs)
~ Raisins (I used Golden), Cinnamon, Nutmeg for sprinkling
~ 3 cups milk
~ 1 cup sugar
~ 1 1/2 cups butter, melted (I used Land O Lakes)
~ 9 eggs, beaten
~ 1 1/2 tsp vanilla (I used real vanilla)

  1. Break bread into large pieces.
  2. Place into buttered 9x13 inch pan.
  3. Sprinkle raisins, cinnamon, and nutmeg over bread.
  4. In saucepan, combine milk, sugar and butter-heat to boiling.
  5. Remove from heat-add beaten eggs (be careful to not curdle eggs in too hot of milk).
  6. Add vanilla, mix and pour over bread, making sure bread is soaked.
  7. Sprinkle more cinnamon and nutmeg over pudding if desired.
  8. Bake at 350 degrees for 20 to 25 minutes or until knife inserted in middle of pudding comes out clean.

Sounds very much like a good old fashioned English "Bread and Butter pudding"....

Bread Pudding makes some of the best french toast you'll ever eat. Just cut it into slices and proceed as normal. Try it with a tropical syrup is this case and thank me later.

No mention of cooking in a water bath, was this omitted? I've never made bread pudding without doing that. It does make a difference.
