friend from back in LA was here and treated me to a trip to Trader Vic's Atlanta and then a speakeasy afterward. we were catching up so much only thought to shoot his last Mai Tai, but we had those, Navy Grog's, Suffering Bastard and a couple of their newer fair. at The Speal easy we had Daquiris, Suffering Bastards, me an Aviation and him an old fashioned with clear ice block shaved on the spot

coffee this AM but last night we did the final taste test for a cocktail we call the Black Tai. Hope that name has not been taken. The final test was whether of not the mint should be muddled, it made so little difference that it was a bust. So are now finished. Could not find a page for new cocktails so here it is.

The Roof Raiser (1943) featuring Passionola, the trademark gold passion fruit cocktail syrup made in small batches in San Diego by the fine folks behind "Fassionola: The Torrid Story of Cocktails' Most Mysterious Ingredient" (2024, Classic San Diego Books). It's far and away the next best thing to a homemade syrup. Thanks to barman extraordinaire Doc Parks for resurrecting the historic recipe with authors Gregorio Pantoja and Martin S. Lindsay. I hear they might have a surprise for us at Tiki Oasis! Pick up the syrup and the book (featuring a detailed history and tons of recipes) at Passionola.com and Fassionola.com ... ROOF RAISER (Skipper’s, Seattle, Wash., 1943) ½ ounce lemon juice, ¾ ounce Passionola Gold, ½ ounce orange curaçao, 2 ounces dark rum Blend with cracked ice and pour unstrained into a rocks glass. A recent Imbibe magazine had this recipe, which I made and found very good and refreshing. Baiju Smash 1 1/2 oz Baiju 3/4 oz Lime Juice 3/4 oz Pineapple Juice 1/2 oz Basil Simple Syrup Soda Water Add baiju, juices and syrup into a cocktail shaker, and shake well with crushed ice. Pour into a rocks glass. Fill with soda water. Rather than making basil simple syrup, I added 1/2 oz simple syrup to my cocktail tin along with the lime juice and a few basil leaves from our garden and muddled. Also, the recipe calls for a pineapple leaf for the garnish, but I used basil flowers.

Planter's Punch recipe from Smuggler's Cove. For the 3 oz of blended aged Jamaica rum I used Planteray OFTD and Smith & Cross. Pretty delicious. Don't get to use the allspice dram too often |

My wife & I and Chris Carmichael rearranged a drink and named it the Black Tai. Here are the fixin's : 1 lime juice 1/4+ orgeat syrup 1/4 Luxardo Cherry Juice 1.5 Black Cherry Juice (nothing added) 1/4 teaspoon maraschino liqueur 1/2 orange juice 1 Worthy Park 109 1 Clément VSOP 1 bitters |
