Da Bali-Hai
For a Mr Bali-Hai

Was at a friends wedding party at his folks house last night reluctantly sipping margaritas as wine was my only other option when low and behold his dad approaches me and says, do you want some rum? I eagerly nod so he opens up the liquor cabinet and pulls out a bottle of Gosling's "Old Rum" and proceeds to pour generously into a large snifter. Wow was this stuff tasty! Anyone ever try it? They don't say how long it is aged or even what proof it is on the bottle or their website.

My better half is away for the next two weeks so I'll probably be posting here frequently as there's no one here to control my consumption and boredumb has already set in. Having some Mai Kai tributes a la Hurricane Hayward tonight.

First up was a Jet Pilot:

Now happening, 151 Swizzle (V2). This is such a good drink:

Looks like an inspiring trip to San Diego H10, that porthole/octopus tentacle/lamp thing at Ironside alone seems worth the trip.

Having a Don's 151 Swizzle. Cut back to 4 drops of pernod as the 6 it calls for seems exteme considering how few other ingredients are in this. And for how much I enjoy spice I feel this needs a little more sweetness. Hayward version V2 as posted above knocks it out of the park for me with the perfect blend of sweet, spice and knock you on your ass.

Aloha mikehooker. Looks like you're not wasting any time getting into the swing of things with your better half unable to provide a voice of reason. Keep up the good work!

I'm enjoying a Mai-Kai Zombie ...

As noted earlier, I recently realized that my tribute recipe was not quite exactly what I was tasting at The Mai-Kai, so I did an overhaul and came a little bit closer to that excellent drink. Here's the scoop ...

UPDATE: Sorry, I had originally posted an incomplete recipe. It's now updated with the addition of 3/4 ounce of passion fruit syrup.

Okole maulna!

Merchant's Air Mail. You can't go wrong with this delicious rummy, bubbly concoction tonight.

2 ounces Denizen Merchant's Reserve (or any other funky aged Jamaican Rum)
1/2 ounce of lime juice
1 teaspoon of honey
5 ounces of champagne

Mix the rum, lime, and honey in a cocktail shaker with ice. Pour into a champagne flute or collins glass and top with champagne.

You can read about the origins of this classic rum drink on our rum mixology blog.

Happy New Year to all!

Yeah that rum is great! I wouldn't have expected it to be as good as it is, but I like it a lot!

I am going to have a midday Sculpin.

Starting the night with a Mai Tai using homemade 10 minute "emergency" orgeat and ED12/Appleton 12.

Be safe tonight everyone.

Dark & Stormy

Lots of drinks last night with some friends and neighbors. Few photos to tell the tale. Made my first attempts at a Mutiny. Pretty damn good. This drink takes a long time to make and it's difficult to batch up since it's over 8 oz of liquid plus a cup and a half of ice and the top down mixer cup only holds so much. So started with one and shared it with a buddy. And then another before more folks arrived.

Once a few people showed up I wanted to make a punch so I went with the Blood of the Kapu Tiki subbing pineapple for grapefruit and tangerine juice for OJ. Was a good way to kill off the bottle of Seven Tiki that's been collecting dust. Everyone enjoyed it, I thought it was a little too fruit punchy though. Adding a few more dabs of pernod to my cup helped.

Friend brought over a homemade bottle of Kahlua so we made some Castaways with that.

Then went back to Blood of the Kapu Tiki just in time for the ball drop, this time using half Flor De Cana gold and half Trader Vic dark. Plus I didn't have enough simple syrup so went with about 1/3 sugar and 2/3 cinnamon syrup. Made for a much tastier drink than the first batch. People really loved that one.

Fun night. No champagne though. What was everyone else drinking?

we rang it in with a bottle of prosecco.

our new tradition is to drink our way around the world on NYD with bubbly from each continent.

still to go: a NZ sparkling sauvignon blanc; an Aussie brut rose; a Japanese sparkling sake; a South African vintage brut rose; an Argentinian sparkling torrontes; and a California brut rose.

gotta get the black-eyed peas, hog jowl bacon, and collards going...

After last night it's a pitcher of Prairie oysters this AM.

I was enjoying my two new acquisitions, mahalo to AdOrAdam:

no aficionado here, but this Taltarni 2010 brut rose is excellent. any of our Aussie posters familiar with it?

I like

Tom has a new drink at his Bali Hai on Shelter Island. calls em "Paralyzing Puffer Fish". Ballast Point rum, Fugu Horchata vodka. Passion syrup, Pineapple juice, and fresh Lime juice. Had several Tuesday and New Years Eve. Little bit sweet but very tasty.
Cheers

Mixed up a sex on the beach, but added some pie hole Apple whiskey. Any good names for it?

That's funny TU :)

"Not married"

Chief Lapu Lapu with Coruba and Flor de Cana. Was a little two citrusy with 2 oz lemon so instead of adding more sugar I floated some LH151. Pretty yummy.

continuing the NY revelry:

sparkling sauvignon blanc (Cottesbrook NZ)- different, but tasty

A "dark" hurricane. Used Coruba dark. First time trying Coruba dark. Absolutely delicious.

It's the closest thing to Lemon Hart that I've ever tasted! This will definitely be the choice Demerara.

Rumdood just got his bottles of Ed's stuff. Once my LH runs out, I can't wait. Meanwhile, I'm drinking Scofflaw's
