Herbsaint tastes a lot like absinthe. One time I was telling a bartender (at a not-very-good bar) how to make a Last Word, and since I'd already had a couple cocktails at that point, I accidentally said absinthe instead of chartreuse. Of course it wasn't good. However, I think if you just cut the absinthe in half, it might actually be really interesting. Herbsaint should work the same. I haven't actually tried it yet, but since you have that extra bottle in your bar, maybe give it a try sometime when you're feeling experimental. |

It would work as a substitute for any drink needing an absinthe rinse or a few drops/dashes of absinthe, i.e., a corpse reviver no. 2. Not necessarily the best for it, but not bad. |
