Clairin - the raw and grassy cane spirit from Haiti - is so new to the U.S. market, there aren't many great recipes out there yet. It's fine in small doses, but not easy to employ as the centerpiece of a cocktail. That all changed when I discovered 96 Tears, a simple Daiquiri riff by Nathan Robinson. Lime juice (3/4 oz), orgeat (3/4 oz) and Angostura bitters (3 dashes) pair perfectly with 2 oz of Clairin. I love the blend of funky, sweet, sour and bitter flavors. Four out of five stars. |

I'll have to give this one a shot. Do you have the Velier series of Clairins? They're a lot more expressive than St Benevolence. |

I'll need to keep an eye out, though it's very rare to see Velier bottles in the wild down there in Flori-duh. Nathan created the cocktail using St. Benevolence, so I defer to him on the reasoning for using it. |

Pretty sure the FRS store carries the unaged and even the aged expressions so you should have distribution down there. The original four are Sajous, Vaval, Casimir and Vaval. They also released a variation called Communal which is a blend of all four at a slightly lower proof that works great in cocktails. It's worth picking some of these up to explore the bizarre side of Haitian rhum. |

Forget the fancy premium rums or cocktails, I'm celebrating National Rum Day by continuing the quest for the perfect replacement for Kohala Bay. The defunct Jamaican rum (a descendant of the legendary Dagger and Appleton Punch) is a key ingredient in most of the classic tropical drinks at The Mai-Kai. Will a combination of Worthy Park 109 and Appleton Signature do the trick? We'll see ... |

Breaking in my new bottle of bottle of Equiano Light with the Burrell Daiquiri (2 oz Equiano Rum, 1 oz fresh lime juice, 0.5 oz agave nectar, 3 dashes orange bitters). Elegant, dry and delicious. The rum is surprisingly rich and funky for a "light" rum, owing to its source of unaged sugar cane juice rum from Mauritius. That's complemented by a 3-year-old molasses-based Barbadian rum from the Foursquare Distillery. |

A Tradewinds over at Smuggler's Cove, then a Last Rites at Last Rites, which might be a new favorite, and a Zombie Killer, which is a Zombie by way of Coconaut lane that I loved even though creamy coconut drinks can turn me off sometimes. |

In tribute to the late Harry Yee of the Hawaiian Village Hotel in Waikiki, we're enjoying his classic Tropical Itch, circa 1957 (recipe from Beachbum Berry's Intoxica and Remixed). Most famous for pioneering the paper parasol garnish (and the iconic Blue Hawaii cocktail), Yee should also be remembered for this enduring classic and it's unique backscratcher garnish. A spinoff called the Backscratcher has become an icon of its own for 50 years at Disney's Polynesian Village Resort in Orlando. |
