Got a fresh bottle of Appleton 12 so a Mai Tai with Clement VSOP, Creole Shrubb, fresh mint from the garden, lime & orgeat (of course).

Green Eyes Coctail

1½ oz. gin
¾ oz. fresh lime juice
¾ oz. green Chartreuse
½ oz. rich simple syrup
½ oz. fresh egg white (pasteurized if you prefer)
Tools: shaker, strainer
Glass: rocks
Garnish: cherry and slice of lime I used a Luxardo cherry.

2 dashes orange bitters
Tools: mixing glass, barspoon, strainer

Dry-shake all ingredients without ice to combine, then add ice and shake again until chilled and foamy. Double-strain into a chilled glass with fre

I've only gone on the tiki nights, so I may not be the best judge. But I think the place is known for well made cocktails, and the bartenders I've encountered are uniformly mindful and well-trained. Enjoy. If you have time also check out the library bar downstairs.

1/2 oz lemon juice
1/2 oz maple syrup
1/2 oz orange curaçao
1/2 oz Appleton Special
1/2 oz Cruzan
Shake and strain over ice
Float 3/4 oz Goslings
Garnish with lavender
