well, there seem to be primarily two different recipes out there. the first, and most prevalent, calls for 2 oz rum, 1/4 to 1/3 oz falernum, 1/4 oz lime and 2 dashes of Angostura bitters. the alternate recipe i came across several times flips the mix-- it calls for 1.5 oz falernum, .5 oz black rum, and 1 dash of bitters. this version looks pretty cool bc the rum sits up on top of the falernum after pouring and looks like an oil sheen (altho i stirred it all up before consuming). for me, the first version was nothing special, and was also too tart. but i really liked the second version (the falernum-heavy version). it was definitely sweet, but it tasted like some new kind of funky cola or something. i've seen a few references to a 1:1 falernum/rum mix, i'll have to try that one next. I really like the Cruzan Black Strap Rum, which is also relatively cheap to boot. By the way, there's a passage in the Keith Richards' autobiography where the great Hoagy Carmichael tells Keef to make sure he orders up some Corn n' Oils whenever he's in Barbados. Way cool! |

I started off my holiday weekend with a Nui Nui which was quite tasty. Now I'm on a McCadden Place Mai Tai (you all know why it's called that right?) from here, http://beachbumberry.com/2009/10/10/cocktail-combat-in-kona/ About halfway down the page for the recipe. It is really good, a bit lime heavy maybe because I subbed Appleton Reserve for the Bacardi 8. I'm thinking maybe some Barbancourt in the next one. 1 1/2 oz. lime juice Rim large snifter or tiki mug with a mixture of sea salt, cinnamon, Telicherry and red Cayenne pepper. Shake all ingredients with crushed ice except for Grenadine. Pour contents unstrained into snifter or mug. Float grenadine on top. |

A very odd tasting liqueur that makes me even more curious about what the original stuff was like. Straight, it has a not-so-pleasant note of baby powder (seriously) that thankfully, the cocktail subdued. |

Sorry -- forgot my favorite one! I'm still a little foggy from all of those drinks :) -Schooner (I loved this drink! Reminiscent of a whiskey sour and a champagne cocktail at the same time. If you like port wine, you will probably love this. If you don't like port wine, you still might like it). Here's a photo of the bar mid-mix last night :) |
