Made a Nui Nui. It was kinda weak. A bit watery and not enough flavor. I added more syrup which made it better, but still it was just ok. Never been a huge fan of this drink, even though it sounds delicious. This time I tried it with Havana Club 7 and still, it's just a mediocre drink, atleast for my tastes. Oh well.

how did you make it?

I used this recipe found here: http://cocktailmuseum.wordpress.com/2006/12/13/seminar-report-jeff-berry-and-lost-vegas-tiki-luau-at-commanders-palace/ (though I shaked it with crushed ice since I don't have a blender)

This recipe is lacking in flavor and the other recipe with 1oz don's spices #2 is way too sweet. I guess 1/4oz each of the syrups would be best with my stuff and taste. I might try it some day.

I don't think you should call that drink a Mai Tai! :)

You're Doing It All Wrong - How to Make a Mai Tai

Relaxing by the pool I cobbled this frozen concoction together to use up some ingredients before they went South on me:

3/4 oz Fresh-squeezed lime juice
2 0z Passion fruit juice
3 oz Coco Lopez Coconut Creme
3 oz light rum
8 leaves fresh mint (adjust to taste)

Put it all in a blender with crushed ice and blended to the desired consistency.
I haven't given it a name . . . yet, but it was a most refreshing frozen drink - that little bit of mint in the background really does it.

Thanx lugi
So much for the book I had

Found this on TC

Planters punch-
1oz lemon
1oc OJ
1oz pineapple
1 1/2oz white rum

Top with Myers

Pucker up

Per lugi

Mai tai

3/4 oz fresh lime
1/4 oz candy syrup
1/4 oz orgeat
1/2 oz orange curacao
2oz Zaya rum
Crushed ice
Shake
Lime/mint

Trader vic's navy grog

Lime
grapefruit
Honey mix
Light cruzan
Coruba
LH 80
Pimento dram

Tasty and hit the spot.

I think TV's called for rock candy syrup in lieu of honey.

but i prefer the honey and allspice combo, it's great.

I agree, hence why I mixed it that way.

I find that anytime I am making a drink that uses a lot of spice, using honey mix rather than rock candy/simple syrup gives the drink an overall better flavor since i think the "Honey" flavors kind of round off and smooth the edges of the spices. And just make for a smoother drink experience. IMHO.

I was too lazy to make some proper falernum, so I made falernum-syrup. Simplesyrup infused with lime zest, ginger, cloves and just a little bit of vanilla. Turned out to be quite damn good. Tried it in a Cobra's Fang and this is awesome. Honestly, I think it might be even better than the properly made stuff.

Just finished a Navy Grog. Used Varadero Silver, LH 151, and Coruba, along with some local honey my friend makes. Seriously good drink.

You know, Zombie.

Made a couple of Samoan Grogs based on this post here. I found it to be a little harsh so I upped the blackberry brandy to 3 teaspoons per drink, seemed better to me.

Cheers!

Chris

Rum.

I made the rich falernum from the Kaiser Penguin blog when I needed some on short notice and was extremely happy with the result. If it had the shelf life of the booze-based stuff, I'd be fine with using it all the time.

Mai-Tai with Smith & Cross, Coruba, and Appleton V/X.
Delicious.

That sounded so good I made mine tonight with Appleton 12 and Clement VSOP.

What orange element do all of you use in your Mai Tai's?

I tend to use Clement Creole shrub and Senior Curacao.

Cheers!
Chris

neither of those are available around here, so i use lowly dekuyper's. although, i tend to use only two teaspoons anyhow, as i prefer a dry Mai-Tai...

I used Bauchant in the ones I made last night.
It's an orange cognac thing like Grand Marnier, but is more orange blossamy... very nice.

Flor de Cana Centenario 12 year.
Lazy but effective.

I have yet to see Creole Shrub, so I have not tried it yet. Curacao for me.

I just made my first Navy Grog via The Bum's Remixed... El Dorado 15, Appleton 12 and Cruzan aged Gold for the light rum.
Wow... I will make this one again!! Ahhh... Tropical bliss.

Q

Hmmm... Not familiar with the "quote" function. I'll work on that after I finish this Navy Grog. :)

Nice Q! I do like Navy Grog as well. Bliss indeed.

Cheers!

Well, so far it's been a Chinese Cocktail, a Rum Ramsey, and now a Demerara Dry Float... all from Vic's '72 book.
Things are starting to get a little blurry.

Had a nice Astro Aku Aku this evening, lowered the simple syrup to a half ounce.

I'm thinking of adding a bit of orange juice to this next time to see what happens.

Cheers!

Getting in the Hukilau spirit with as close to an authentic Black Magic you'll find outside of The Mai-Kai ...

A review and ancestor recipe are in the works. Check the blog in the next day or two.

^ Looking forward to that.

Just made Hayward's Shark Bite tribute and this is one fiiiine drink.

3/4 oz. Lemon Hart Demerara 151 Rum
6 drops St. George Absinthe Verte

Shake with crushed ice and pour into a tall glass or tiki mug. Fill with more crushed ice. Garnish with mint and pineapple spear.

Turn amp to 11 and play loud!

^Having one now, no amp, but I think I'm getting the vibe . . . very tasty!

LOVE THIS THREAD! here is from a couple nights ago, was more about trying out new camera and lightbox, so drink needs work, but a mix of Myers dark, Old Mill gold, Maui silver (mix of rums aerated to round out since they are all lackluster) fresh orange, coconut water, Galliano, Canton, and a touch of honey syrup

light and dry, though as mentioned proportions needed work, a bit more orange, a bit more honey, rum total if i recall was around 3 1/2 oz, so it was a balancing act

Earlier this evening I had a mojito. It's been a long time since I've had one and it was really refreshing.
Today I bought some snifter glasses, just for black magic. Just savouring it right now and dude, this drink sure is magic.

I'm not a fan of coconut (or SUPs), but I'm digging this stuff!

[ Edited by: skeeter 2012-04-13 21:45 ]

My search skills (or lack thereof) don't seem to be helping. Can anyone recommend some tasty tiki drinks that include both passion fruit and mango? Juice or syrup is okay. I have both kinds of juice that need to be used up but I don't mind spending a few minutes turning them into syrup if necessary.

Q

Hey Pouteniki,
Have you tried the Grogalizer website? You can put all your ingredients in and get a list of drink to make from The Beachbum's books. It's pretty cool.
OR... get the Tiki+ app and you can do a similar search.

Hope that helps!

Oops! I spelled it wrong... sorry. Poutineki...

I tried a Blackbeards Ghost and a Kon-tini over the weekend. The ghost was nice with a lighter flavor profile. Probably because of the OJ and Lemon juices.
The Kon-tine was outta sight!! I'll definitely have that again. Both out of The Bum's Remixed, btw.

Tikiphile in training...

[ Edited by: Q-tiki 2012-04-15 08:26 ]

Thanks! I'll take a look at that. I have Remixed but didn't find much in there that uses both juices. I was hoping to find something that uses both that could be batched, I'm having some people over this evening, but I'm ok with playing bartender if I need to.

Delayed post as it is morning and I was drinking last night but,

I had to get rid of some almost empty bottles so I eliminated two almost empty bottle of tequila by drinks Palomas, using Wondrich's recipe:

La Paloma
Build in collins glass
2 ounces tequila
1/2 ounce lime juice
pinch of salt
add ice then top off with
grapefruit soda ( I used Jarritos)

Not tiki, but one of the better ways to finish off a bottle of tequila to make room for more bottles of rum.

Whiskey old-fashioned.
Booker's 125 proof is scrong.

now, a J.Wray & Nephew Overproof old-fashioned.

scrong.

My own version of Shrunken Skull

3/4oz fresh lime
3/4oz cinnamon syrup
3/4oz pomegranate juice
1oz Havana Club 7
1oz El Dorado 12

Puts a smile on my face. I use juice instead of grenadine because there is no good quality grenadine here. But there is awesome juice, which works perfectly. And this way it's easy to adjust the cinnamon flavor, which really makes the drink, without making it sickly sweet.

Edit: Next one is Pearl Diver's Punch. I accidentally used regular honey instead of orange blossom, but meh, this is just as tasty.

Lucas Chardonnay with Trader Joe's strawberry-blueberry granola on the side . . . I know, I know . . .

a shot of highlands silver tequila, followed by a lowlands La Paloma, followed by a shot of highlands anejo tequila, followed by a shot of lowlands blanco tequila, followed by...?

Ok we've been paddling hard this past week as outrigger canoe sprint race practice has begun and come Friday my Wahine and I are beat! So of course we can find no better reward to a week well done than a couple of nice tall tiki drinks. Our drinks of choice this week are by the man who knows how to fill a big ole tiki mug to the brim with complex potent concoctions, and this would be Kahuna Kevin who has two cocktail books out as you probably know.

For my Wahine, she is enjoying the Kapu Inu (Forbidden Drink) which includes gold rum, coconut water and LH 151.

For myself, I am enjoying Kevin's 151 Gun Swizzle which includes two freakin ounces of LH 151.

Cheers! And Imua!!!!
