I'm doing the Hayward 3.5 version which has fassionola and falernum, no cinnamon or grapefruit. Plus it has a 1/2 oz more rum than yours. Makes a mighty complex and flavorful drink. I'd be curious to try the version you're doing to see how it compares. A friend just had me over to try a Trinidad with homemade cinnamon syrup which was really nice. I will be making my own cinna syrup very soon for sure. Here's Hayward's tribute recipe:
Pulse blend for with 1 cup of crushed ice for no more than 5 seconds. Pour into a double old-fashioned glass, adding more ice if necessary. |

I haven't had a grapefruit at home in about a month, got one today, one for me (Steve Crane's Jet Pilot): One for my lady (a Montego Bay ~ experimenting with 2 rums in that one): One for me (a Navy Grog): Once upon a time I used to frown at using more than 3 or 4 ingredients but they're easy to balance when you practice! |

Made a couple Mahalo Mikes from the recipe in "Trader Vic's Tiki Party". First one I made per the instructions, came out ok, but didn't fill the glass...so I didn't take a pic of it. So, for the second, I increased all the ingredients by 50%. Filled the glass, but when it came time to mix the top layer I came up a bit short on the crushed ice. I used what I had, as i didn't want the bottom to melt and dilute while I crushed more. You can see the top syrupy layer (denser than the bottom) starting to sink. A few minutes after this pic was taken, it was all the same color. I had to work on the clothes washer (look up how to bring up fault codes, look up fault codes, remove water lines and clean screens....you know how hard it is to do that after two...technically 2.5 since I increased the second...of these?) so I did't bother to make another. It's a souvenir glass from the TREX restaurant in Orlando. I turned it around so the logo was on the backside. I used to see these and even more of the Planet Hollywood ones in thrift stores all the time, didn't think of picking them up until I saw the Molokai Mike photo. Now, seems I can't find them anymore. I only have the one, wish I could find more. ....and now that I am more sober (or less drunk?...) I noticed that my previous post I called it a Mahalo Mike instead of a Molokai Mike. Chipping away at Professor Cocktail's Zombie Horde recipe book this Halloween week. Trying a Founding Farmers (Jon Arroyo) Chief's Zombie for the first time. Used Cruzan 151 instead of the Bacardi that is called for. Very well-balanced Zombie iteration for the most part. Calls for Ango and Peychaud's bitters as well as falernum and absinthe — all of which give this modern take on the classic Zombie enough complexity to keep it interesting. Also includes pineapple juice, maraschino liqueur and grenadine which together probably make the drink just a tad sweet. Will remake and dial back the grenadine a bit, and might sub Lemon Hart 151 as well. I am liking this Zombie! |

Having a Ramos fizz wid my better half. We’re standing under the overhang of the Sharkbite Bar trying to stay dry while listening to that rare SoCal rain. She’s liking the Fizz but I’m not too sure she likes the vintage Hawaiian sounds I enjoy on the Bose. We’re both decompressing after a couple of nights at Humphrey’s and at the Bali Hai. Mamie Taylor is a really good cocktail. To use up a 12 ounce bottle of ginger beer I'll usually do combinations of Dark&Stormys, Mamie Taylors, and El Diablos until the ginger beer is gone. Now that I have discovered the Rum Babalu I will have to add that to the ginger beer mix too. |
