A pitcher full of Lapu Lapu. To wash down a bowl of shrimp fried rice. I’ve been “tweaking” my recipe for fried rice. I used sesame oil today instead of grape seed oil. Eureka! It was onolicious. [ Edited by: nui 'umi 'umi 2014-03-28 20:18 ] |

Changed up my usual Mai Tai recipe. Instead of using Appleton 12 Year (which is out of stock everywhere around here ) and St James Rhum Agricole Hors d'Age, I used 3 parts Plantation 2000 Pot Stilled Jamaican Rum to 1 part Lemon Hart 80 Demerara Rum. It made for a tasty, rummy, and delicious blend. |

That's when you know you've got a good drink on your hands :) Props to Atomic Grog, I have tried a mere 10 out of the 44 drinks they have on the site, I look forward to trying the S.O.S :) My two tonight: Mai Tai (Appleton 12 & Trois Riveras Blanc) - the rhum is strong in this one! Old Fashioned (Crown Royal, maple syrup & bitters) - delicious :) |

Mahalo GentleHangman and AdOrAdam! Re Cobra's Kiss: That one's a delicate balancing act. Just the right amount of Pernod will offset the sweetness, but too much will ruin it. The Mai-Kai's bartenders pull it off on an incredibly consistent basis. Re my recipes: I have to remember to give credit to The Mai-Kai and Beachbum Berry for the inspiration, of course. Also, I try to go back to the original master (Donn Beach) to remind myself where it all started. Re tonight: I'm having one of my favorites, Don the Beachcomber's Rum Julep from Sippin' Safari, in an attempt to figure out Mariano Licudine's version ... I went with Appleton Extra and Lemon Hart 80 for the rums. Rich honey mix, plus Fee Brothers grenadine and falernum. Instead of pimento liqueur, I tried Don's Spices #2. Pretty darn close, but further research may be necessary. |

I use equal parts vanilla syrup to pimento liqueur, per the recipe in Sippin Safari. I'm not sure how much it helps, but I think it's a good idea to mix and keep in a separate container to let the flavors mingle. |

H10, That Polynesian drinks booklet is killa. I did a google search on the authors. Nothing on Dick Moano and I found a Wally Turnbow on a grave finder site (1921-2005). Tonight's two drinks, continuing with the Tiki+ app: Banana Daiquiri - this is a weird drink, kind of a milk-less banana milkshake! After making & tasting I added 1/2 shot Smith & Cross to pep it up, I might go full jamaican next time :) Good fun 2 try out a Three Dots & a Dash (the bar) style garnish: 1970s Beachcombers Gold - this is more classic than tiki, the vermouth seems out of place... |
