A pitcher full of Lapu Lapu. To wash down a bowl of shrimp fried rice. I’ve been “tweaking” my recipe for fried rice. I used sesame oil today instead of grape seed oil. Eureka! It was onolicious.

Changed up my usual Mai Tai recipe. Instead of using Appleton 12 Year (which is out of stock everywhere around here ) and St James Rhum Agricole Hors d'Age, I used 3 parts Plantation 2000 Pot Stilled Jamaican Rum to 1 part Lemon Hart 80 Demerara Rum. It made for a tasty, rummy, and delicious blend.

Last night I tried three of Atomic Grog's Mai Kai Tributes:
Cobra's Kiss
Made as written, it was far too sweet for me having 1/2 oz fassionala (English brand) and 1/4 oz of grenadine (Monin Pomegranate). On my second attempt I cut the fassionala back to slightly less than 1/2 oz and only added a "splash" of the grenadine. For my taste, it was a better balanced drink, but still on the sweet side.

Samoan Grog
This is a nice well-balanced drink. I tried it as written and with the rum quantities reversed. I liked it better with 1 oz of dark (Kohala Bay), and 3/4 oz of Gold (Don Q). For Don's Spices #2 I used Fees French Vanilla syrup and St. Elizabeth's allspice dram. This is a drink easily made in quantity and one I would gladly serve to guests.

S.O.S.
This was my favorite; smooth and well balanced exactly as written. By this time my Don Q was gone, so I substituted Ron Carlos dark, and Eldorado 12 year old for the Lemon Hart 80 (not available here). This is a drink of which I could have several and not tire of. This is another drink I'd be able to make in quantity and happily serve only to my closest of friends. It's too good for the masses.

Props to Atomic Grog, I have tried a mere 10 out of the 44 drinks they have on the site, I look forward to trying the S.O.S :)

Re Cobra's Kiss: That one's a delicate balancing act. Just the right amount of Pernod will offset the sweetness, but too much will ruin it. The Mai-Kai's bartenders pull it off on an incredibly consistent basis.

Re my recipes: I have to remember to give credit to The Mai-Kai and Beachbum Berry for the inspiration, of course. Also, I try to go back to the original master (Donn Beach) to remind myself where it all started.

Re tonight: I'm having one of my favorites, Don the Beachcomber's Rum Julep from Sippin' Safari, in an attempt to figure out Mariano Licudine's version ...

I went with Appleton Extra and Lemon Hart 80 for the rums. Rich honey mix, plus Fee Brothers grenadine and falernum. Instead of pimento liqueur, I tried Don's Spices #2. Pretty darn close, but further research may be necessary.

Hurricane - Donn Spice #2 would be what proportion of pimento dram and vanilla syrup? I actually happen to have both right now in the bar

I use equal parts vanilla syrup to pimento liqueur, per the recipe in Sippin Safari. I'm not sure how much it helps, but I think it's a good idea to mix and keep in a separate container to let the flavors mingle.

H10, That Polynesian drinks booklet is killa. I did a google search on the authors. Nothing on Dick Moano and I found a Wally Turnbow on a grave finder site (1921-2005). There’s a copy of their book (signed by Wally) on Amazon available right now for 88 bucks-didn’t find a price on unsigned copies
Btw, my wife CeCe and I polished off a bottle of dat Koloa dark when we on Kauai last year. Makes a tasty Planter’s Punch. Luv your posts Jon, neva stop!

Whole chicken roasted in my Weber, served with vegetable fried rice and washed down with T V’s ’44 Mai Tai’s.
Used “organic” bottled lime juice. Makes an acceptable M. T. -Not sublime. Plus I miss the lime shell.

Tonight's two drinks, continuing with the Tiki+ app:

Banana Daiquiri - this is a weird drink, kind of a milk-less banana milkshake! After making & tasting I added 1/2 shot Smith & Cross to pep it up, I might go full jamaican next time :) Good fun 2 try out a Three Dots & a Dash (the bar) style garnish:

1970s Beachcombers Gold - this is more classic than tiki, the vermouth seems out of place...

Nothing like fresh guacamole and a couple of Mai Tai’s made with fresh limes.
