Lemon Hart Lemon Head...

In a coffee mug, 90 Minute IPA. I was walkin the hounds and didn't want 5-O to notice.

Catamaran. made a double dose and ran out of vodka after 2 oz. Replaced missing vodka w/rum.

mint, lemon slice, lime slice symple syrup, rum, lots ice.

Last night:
"Headhunter Zombie" from the Hawaii Kai Cookbook

1 oz papaya nectar
1 oz peach nectar
1 oz fresh lime juice
1 1/2 oz Demerara rum (I used El Dorado 5YO)
1 oz 151 rum (I used Wray & Nephew overproof)
3/4 oz gold rum (I used Appleton Special)
3/4 oz honey
Dash of Angostura bitters

Very potent!
On my second one, I cut the Wray & Nephew back to 1/2 oz and bumped up the Appleton Special to 1 oz and it let me keep my head.

I just made a Corn 'n' Oil. It's not that bad and it reminds me of the Cuba Libre.

Here's what I put in it:

  • 2oz Cockspur rum
  • 1oz Taylor's Falernum
    1 dash of Angostura bitters
    2 dashes of orange bitters
    1 lime wedge

Stir the mix with ice cubes in an old-fashioned glass about 20 times. Squeeze the wedge's juice in the drink and then dunk it in.

My third current make-do Mai Tai (proper ingredients can be hard to find in Australia!)

3/4oz orgeat
1/2oz Cointreau
1oz lime juice

Heading to the States and Tiki Oasis 9 this month and looking forward to bringing back some St James to do this properly!

At least I'm drinking from a proper Trader Vic's Mai Tai I procured from the Bangkok TV.

My mint crop finally came in, so I made myself a Mai Tai with a float of Lemon Hart 151 on top.

I'm drinking Tonic and Beefeater 24 with a slice of Lemon Bliss :)

Ya know... I like Beefeater gin... but right now it's a Mai Tai with Bacardi Gold and Gosling's Black Seal. The Gosling's is a bit too dominate... but I'll suffer through it somehow!

Carioca Hawaiian Cocktail from Intoxica. Double doze.

An "official" Dark and Stormy, made with Goslings Black Seal Rum and Barritts Ginger Beer.

Well I'm on having a MAi Tai.. and saw this thread was fading so.....

MAui Dark Rum
Lemon Hart Demehara
Kona Trader Orgeat
Curacao ..
splash of rock candy
Lime and fresh mint from the garden..

I guess it's ono, this is my third one in less than.......

I love Mai Tais and I love Margaritas, so on a whim, I decided to mix these classic recipes together to see what happens. To my surprise, the result is muy delicioso! I call it the Mai-Tairita!

2 oz. Patrón Silver Tequila
1 1/2 oz. Fresh Lime Juice
1 oz. St. James Martinique Rum
1 oz. Appleton V/X Jamaican Rum
1 oz. Cointreau
1/2 oz. Señor Curaçao of Curaçao Liqueur
1/4 oz. Demerara Cane Sugar Syrup
1/4 oz. Orgeat Syrup
1/2 Spent Lime Shell

Shake all ingredients except for lime shell with 1/2 cup of crushed ice. Pour into a large snifter or margarita glass, then fill with more crushed ice. Drop in the lime shell and garnish with mint.

Note: you can also rim the glass or snifter with rock salt unless you're a hypertense kind of guy like me.

More fun with Tequila, Brandy, and Rum.

Escorpión Mexicano

2 oz. Reposado Tequila (I used Corralejo)
1 oz. Presidente Mexican Brandy
1 oz. Appleton Special Rum
1 oz. Orange Juice
1 oz. Freshly-squeezed Lime Juice
3/4 oz. Passionfruit Syrup
1/2 oz. Cointreau
1/4 oz. Licor 43 Liqueur
1/4/oz. Orgeat Syrup
1/4 oz. Demerara Cane Sugar Syrup
A few drops of Habanero hot sauce

Shake with crushed ice and pour into a large goblet. Fill with more crushed ice. Garnish with mint.

Hawaiian Iced Coffee

6oz strong Kona coffee
3/4oz macadamia nut liqueur
1/4oz orgeat
1oz anejo rum (medium bodied, bacardi is fine)

Shake with ice and pour over, add a splash of cream. So good on a hot day and keeps you going.

I made a Suffering Bastard. But I used a double rocks glass not the approved ceramic container.

1 oz lime
3/4 oz Wild Turkey burbon
1 oz Booker's gin
1.5 dash Angostura bitters
4 oz ginger ale

Build in glass, add ice, stir.

120 Minute IPA. Mmmmmm!

Navy Grog

3/4 oz lime juice (I like sour drinks so did 1 1/2 oz instead)
3/4 oz grapefruit juice
3/4 oz honey (I warmed it up in the microwave)
1 oz light Puerto Rican
1 oz dark Jamaican rum
1 oz Demerara rum
1 oz chilled Club Soda
1/4 oz Pimento liquor

Heat honey, mix with the juices, stir in rums and soda, pour over ice.

Playing with my new bottle of Mezcal tonight, and came up with the following incredibly smooth and delicious variation on the classic Caipirinha:

1 Fresh Lime, quartered
2 oz. Mezcal (Gusano Rojo)
1/2 oz. Cachaça (Ypióca)
1 1/2 oz. Demerara Cane Sugar Syrup
Dash of bitters (Fee Bros.)
Garnish with worm

Muddle lime quarters in a double old-fashioned glass. Fill with ice cubes and swizzle with remaining ingredients.

2oz of Chaya repesado
1/2 of Cointreau
easy squeeze of half a lemon
and teeny bit of oj

First of this season's Michigan apple cider on ice with 1 1/2 oz. of Coruba dark rum. Simple? Yes. But so very very good.

I harvested my bumper crop of Cayenne peppers just before our first hard frost of the season, and I thought they'd make a damn fine cocktail garnish, so here's my South-of-the-Border riff on the classic Aku Aku Lapu from the Bum's Intoxica!:

1 oz. Fresh Lemon Juice
1 oz. Fresh Lime Juice
1 oz. Unsweetened Pineapple Juice
1 oz. Orange Juice
1 oz. Falernum (Fee Bros.)
1 oz. Appleton V/X Rum
1 oz. Presidente Mexican Brandy
1 oz. Patrón Silver Tequila
1 oz. Pisco Capel Reservado

Shake with crushed ice, and pour into a large snifter. Fill with more crushed ice. Garnish with a large Cayenne pepper speared and cracked to allow the spicy aroma to permeate the drink.

I was in the mood for a Gin drink. Found this recipe in Intoxica. I like it a lot in fact I made it 2 nights in a row. I used fresh orange, lemon and lime and I added a few sprigs of mint into the drink.

Del Coronado

1/2 oz unsweetened pineapple juice
1/2 oz passion fruit juice
2 1/2 oz orange juice
3/4 oz fresh lemon juice
1/4 oz fresh lime juice
1/2 oz papaya nectar
1 oz gin
1 oz dark Jamaican rum

Shake well and pour into a tall glass.

Just finished two Jet Pilots and a Floridita Daiquiri.

Tomorrow I, too, am going into the Gin for some drinks, I think a Singapore Sling or three are in order.

Just finished a lot of beer, from having performed at Harpoon Brewerys Octoberfest, which was followed up by a shrunken skull, and a jet pilot, both Mai Kai style.

About to make some orgeat for my next Mai Tai.

For my dinner guests: Don the Beachcomber's Plantation Punch ftom "Hawai'i Tropical Rum Drinks & Cuisine by Don the Beachcomber.

1 1/2 ounces of light Puerto Rican rum (I used Virgin Island rum)
1 ounce of Jamaica rum (I used Appleton VX)
1 ounce Demerara rum (I used El Dorado 5 YO)
1/4 oz Falernum
1/2 oz Tripl Sec
1 oz fresh lime juice
2 oz club soda

Not a bad drink and easy to make in quantity.

I have a bottle of St. Elizabeth Allspice Dram and I wanted a simple recipe for a rum drink. so I found this one in the Grog Log. It is good and tasty.

Jasper's Jamaican

1/2 oz fresh lime juice
1/2 oz Pimento liquor
1/4 tsp. sugar
1 1/4 oz gold Jamaican rum

Dissolve sugar in lime juice, shake everything well with ice. Strain into a cocktail glass.

That drink by Mr. BaliHi looks just like a drink they serve in Nevada called "the inguano".

1/3 Hot pepper infused tequila*
1/3 good margarita mix
1/3 orange juice

Fill a double old fashioned glass with crushed ice, garnish with a pickled cayenne on a decorative tooth pick or plastic sword.

*Grill about 6 Jalapenos (or hotter peppers to taste) and add whole to a good 750 ml bottle of tequila.
