Mai Tai. I make a self-styled "updated" version using half light rum (10 cane) and half dark rum (whatever is on hand...tonight, Pusser's -- adds a smoky note...first time trying this particular combo -- it's great with Appleton 12).

Love the Voodoo Priestess! Need to whip up some more spice syrup. Finally hunted down passion fruit syrup locally, so I'm mixing up some Reverb Crash this evening!!!!! Also picked up some Goslings, so might have a Dark 'n Stormy as well.

Rum Barrel

3/4 oz. fresh lime juice
3/4 oz. o.j.
3/4 oz. unsweetened Pineapple juice
3/4 oz. Alize passion fruit liquor
3/4 oz. sugar syrup
3/4 oz. dark Jamaican rum (I put 1oz)
3/4 oz. Bacardi 151 rum
mint, mint, mint

Shake with ice cubes and pour into ceramic barrel rum.
Yummy.....

The Grinch:

2 oz AppleJack whiskey
1/2 oz velvet falernum
1/2 oz simple syrup
3/4 oz fresh lime juice
2 dash Regans orange bitters
3 dash fees whiskey bitters

shake with ice and strain into a rocks glass with ice.

quite a tasty winter drink, has been requested 3 nights in a row by the wife.

A martini... not terribly tiki, but there it is. I did want to recommend some rum i just bought though. I went to Saint Lucia for my honeymoon and bought a few bottles of rum. The mid tier is called Chairman's reserve, and the top shelf is called Admiral Rodney's. I liked them both and bought two bottles of AR.

Mmmmmm... Mai Tai (s) with Appleton Estates 12 year and Myers. And the cold has destroyed the mint patch... so not the best presentation, but quite tastey!

Martin Cate's own The Dead Reckoning

1oz fresh lemon juice
1oz pineapple juice
1/2 oz Maple syrup
1/2 oz Towny Port (I used any port around!)
1/2 oz Navan Vanilla Liquor ( I used any vanilla liquor I could find)
2oz Flor de Cana 12 year rum ( I use Matusalem Gran Reserva 15 year old)
Dash angostura bitter
1 oz soda

Shake with ice, pour over ice garnish with Mint, lemon twist and pineapple leaf (not)!
very very good.

Decided to give my new coconut mug a spin and mixed up a Lei Lani Volcano from the Grog Log. Too sweet for my tastes, so I tweaked it a bit for the 2nd round, and came up with something that had a bit more bite:

1 oz. Lime Juice (fresh-squeezed, of course)
2 oz. Guava Nectar
1 1/2 oz. Unsweetened Pineapple Juice
1/4 oz. Homemade Grenadine
1/4 oz. Demerara Cane Sugar Syrup
2 oz. 10 Cane Rum
1 oz. Presidente Mexican Brandy
1/2 oz. Kalani Coconut Liqueur
1/2 oz. Lemon Hart Demerara 151

Shake all ingredients with crushed ice and pour into ceramic coconut mug. Float 151 on top.

As a giant Midwestern ice/sleet/snow storm heads inexorably towards me, I'm chillin' with a hot Popocatépetl:

1 oz. Cruzan Blackstrap Rum
1 oz. Presidente Mexican Brandy
1/2 oz. Patrón XO Café Coffee Liqueur
3/4 oz. Fresh-squeezed lemon juice
1/2 oz. Don the Beachcomber's Coffee Grog Batter (see Sippin' Safari for sekrit ingredients)
Hot herbal tea (I used Good Earth Orange Spice)
4 whole cloves

Mix all cold ingredients in a skull mug, then add boiling hot tea. Garnish with a strip of lemon peel.

Baby, it's cold outside, and nothing goes better with subzero temps here in the Upper Midwest than a steaming hot Tom and Jerry, so I thought it might be fun to try and tikify this classic Winter tipple. I call the result the "Tabonga and Jerry" after the killer Polynesian tree monster in the not-so-classic cult film, "From Hell It Came."

1/2 cup of Tom and Jerry batter (buy it pre-made at the store or google the recipe and make it yourself)
1 oz. Cruzan Blackstrap Rum
1 oz. Presidente Mexican Brandy
1/2 oz. Fresh-squeezed Lime Juice
1/2 oz. Fee Bros. Falernum

Add all ingredients to a tiki mug with a handle, then add boiling-hot water to fill. Dust with ground nutmeg and garnish with a cinnamon stick.
