I love this show a Chefs life on PBS, does everybody have the TV channel PBS? She even cry’s and may tell you the restaurant biz is not so fun all the time, It’s so real. This BBQ joint goes thru 2000 pounds of cabbage a week! I knew I made something right as she would tell people she made it. Had never heard of garlic scapes. If you ever make shallot salt you will find out why they don't make and sell shallot salt. Thanks for the heads up on the garlic scapes reminds me of Ramps. This is what I like about the show a Chefs life as they also talk about cooking ways and ingredients long forgotten. Making watermelon pickles soon. |

My first restaurant job was as a waiter at 1890's "Summer Cottage" on the Maine Coast. It was also an Inn and I lived on the 3rd floor. I did it for 5 seasons before and during college. Everything was "old school" service (vests-bow tie) w/ all courses included, tray service, serve from the left clear from the right...etc. We also passed a 4 item relish tray after serving the main course...the #1 chosen by FAR? The Pickled Watermelon Rind. We could never keep it stocked enough. I had never had it before then. We had older, well set guests....they were animals over that...thanks for rekindling the memory Skip! BTW, We love shallots...very KEY in Veal Marsala. |

I decided to scale back a bit and be safe so I made 2 big electric skillets of Paella instead, one with shrimp and crawdads and one with linguica and chicken |

Tonight was home-made pizza night. Pizza #1 was white sauce with grilled marinated artichokes and mushrooms. Pizza #2 was red sauce with Italian sausage, bell peppers, green olives, sun dried tomatoes, banana peppers, and mushrooms |

This was a vegetarian curry dish with jasmine rice. I had chicken on the side to add to the curry. Came out excellent. here are some pictures. Didn't have a chance to put the actual plate of food, hehe, too hungry and in a hurry to eat. |

hiltiki, Yes, we add that along with the great veggies you used to bump up the "texture" profile as well as flavor. That is if you like cauliflower. :) |

No step to step today, I was too late for it. But this was one of the best Swordfish I ever had, fresh and delicious with kale salad and saffron rice and mushrooms. |

Had to grill...with our 90 degree 1st day of fall heat. Bought, trimmed and cubed a Sirloin tip, which my Wife marinated for 3 days in a red wine/ garlic concoction. Served w/ her rice pilaf. Excellent. |
