Just picked some tomato’s, neighbor gave me an avocado-I can taste the guacamole already. Guac and Mai Tais. I love summer!

Gotta love fresh off the tree & vine Dave.

Leftover nite after a week of cooking on Oahu.

Salsa made of fresh pineapple and fresh mangos off the neighbor's tree with red pepper flakes (it was in the cupboard) Served over roasted pork tenderloin.

Spam Fried Rice

Grilled teriyaki beef and grilled teriyaki chicken with pineapple

Made up some Spam Rumaki inspired by Prof G. It was good - crunchy water chestnut, sweet teriaki, salty bacon. Definitely worth trying again. (not a very fancy presentation, sorry)

Chicken & Garlic Herb Ravioli with Italian Chicken Sausage
in a Crushed Tomato sauce....Mangia Bene!

Everything is homemade except for the Italian Chicken Sausage, got that at Sprouts Farmers Market...

Banana Upside Down Cake

More subtle than pineapple but still good. Banana slices start to darken quickly so it's best to eat it all in one setting :lol:

Doing Lowbrow Cuisine tonight!

Homemade Coney Island Chili (Cincinnati style) or to be accurate "Coney Sauce"
for some authentic "Coney Dogs" (FYI: These originated in Detroit)

I used Boar's Head hot dogs, because they are great and I can't find any imported dogs here.
The Cincinnati style chili is on the sweeter side compared to the original Detroit style Coney Sauce.

Hey Dale, No........just kidding!

Char Siu Chinese Barbecued Pork recipe

In a dish with a lid
2 Pork Tenderloins,cut in half to end up with 4 Med. pork Tenderloins

Salt & Pepper to taste on each Tenderloin
Spoon 2 Tablespoons of Char Siu sauce over each piece of pork
(I use "Lee Kum Lee" brand Char Siu Sauce from my local Asian market & not that red dye packet stuff)

Place 1 Tablespoon of minced Garlic
1 Tablespoon of minced Ginger
2 Tablespoons of Soy Sauce
1 Tablespoon Sesame Oil
over the Tenderloins
sprinkle on some Sesame Seeds

place lid on container and shake so all the Pork is coated in the sauces & spices
Marinate for 24 to 48 hours in the refrigerator

When ready to cook preheat the oven to 350 degrees
cook the Tenderloins in an uncovered dish (Use a rack if you have one) with foil on the bottom (makes cleanup easy)
for 35 to 40 minutes,(you may have to adjust the cooking time for your own oven)
let the Pork rest for at least 5 to 10 minutes before thin slicing.

Nice looking fish tacos there Storm.

Tonite's dinner; Chicken Tikka, Basmati Rice, Samosas, and Naan

I SLAVED over this dinner :lol:
The Tikka was a jar from World Market
The chicken was pre-cooked strips from Costco
The Naan was from the bakery at Walmart
The Samosas were made from Country Crock mashed potatoes, canned peas, and some additional spices wrapped in uncooked tortillas and fried
I did actually cook the Basmati (although I did briefly consider the boil-in-bag kind :wink: )

I was confessing my faux Indian food to an Indian co-worker and she told me that is EXACTLY how she does hers - jarred sauce and samosas made from uncooked tortillas. Except she boils potatoes instead of using ready-made mashed :lol:

Went on the Tiki Ti 18th annual fishing charter hunting for Tuna.

Some Yellow Fin Tuna showed up.

Great on the grill.

With olive oil and this nice Mermaid Kiss Tiki spice we picked up at the International Market Place
