Aloha Mike, I didn't use xantham gum in my version since I was trying to keep it simple. But I did review both of Garret's Derby Daiquiris and post my take. Incantation (à la Black Magic), Garret Richard's tribute to The Mai-Kai classic in Tropical Standard. More than any of his other Mai-Kai inspired cocktails, Garret absolutely nails it with a big and bold, spicy and rummy drink that still retains a perfect balance. Mariano Licudine would be pleased. The deadly Deep Six by Jeff "Beachbum" Berry, featured in the latest issue of Exotica Moderne. Sorry I don't have the namesake bowl, but you can buy it online and check out the recipe at https://beachbumberry.com/barware-deep-six-bowl.html ... Instead, I stayed in theme with a half serving in a first edition Piranha mug from Trader Sam’s. Sustainable glass straw by Surfside Sips.

Those pineapple corers are handy and really inexpensive.

1 1/2 oz Brugal 1888
1/2 oz Giffard Banana Liqueur
3/4 oz Lime Juice
1/4 oz Falernum
1/4 oz Orgeat
Shake with crushed ice, strain over fresh ice.
Float 5 dashes Angostura Bitters and garnish with a mint spring.

Be sure to mix after serving. Mine was a little sweet at first and a little bitter at the end. Would have been better balanced throughout if I had stirred it.

3 oz Tequila Blanca, or Mezcal if you're bold (I used 2 Tequila and 0.5 Mezcal)
2 oz Coco Lopez
3/4 oz Pineapple Juice
1/4 oz Lime Juice
2 teaspoons Luxardo Liqueur
2 dashes Angostura Bitters
Blend with 8 oz crushed ice, top off mug with more crushed ice as needed.

I continued a tradition I started last year after the passing of rum collector and cocktail connoisseur Steve Remsberg: I once again kicked off the new year with Stephen Remsberg’s Planter’s Punch (from Beachbum Berry Remixed). There are so many outstanding Jamaican rums on the market now, it's easy to enjoy this classic year after year with different combinations and it never gets stale. As an added bonus, I paired the cocktail with a thoughtful Christmas gift: Jamaica Rumkugeln rum balls from Germany (featuring Jamaica rum verschnitt).

Bitterly cold in the mountains today. Had on Quiet Village Radio on at work today as an escape, and heard my recipe for Captain Lush's Grog a couple of times, so decided to make that this evening. Unfortunately, I recently discovered that my Marty Lush glass has a massive crack.

Created by Don the Beachcomber in the 40s for his ex-wife Sunny Sund - "Sunakora, Queen of the Beachcombers".
3/4 oz Dark Jamaican Rum
1/4 oz Barbados Rum
1/2 oz Lime Juice
1/2 oz Grapefruit Juice
1/2 oz Orange Juice
1/2 oz Pineapple Juice
1/2 oz Honey Mix
1 tsp Falernum
1 dash of Angostura Bitters
4 oz of Crushed Ice
1/2 oz Club Soda
Flash blend everything except the club soda and pour into a pilsner glass. Add club soda and stir, add more crushed ice to fill.
I picked Doctor Bird for the Jamaican because I knew it could stand up to all that mixer. Mixed as a double. (Recycled photo)

  • 5 drops of 20% saline solution
  • 3/4oz lime juice
  • 1/2oz of home made orgeat
  • 1/2oz of Cointreau
  • 3/4oz of Plantarey Xaymaca
